Pear-Pecan Quick Bread

We have a pear tree in this new house. There are a bazillion pears on it and I had no idea what to do. So I started baking. We also had a bunch of packets of NECTRESSE™Sweetener so I decided to experiment. Nesctresse is 100% natural and made from monk fruit. I like making breakfast breads but my family does not need the sugar. One problem that I have had in the past with sweetener is that I could not back with them. Apparently with Necresse I can so I made a Pear-Pecan Quick Bread. Everyone loved it and nobody knew that it had no sugar in it. Here is the recipe. Enjoy.
Ingredients
· 3 cups all-purpose flour
· 1 teaspoon baking soda
· 1 teaspoon salt
· 1 cup chopped pecans
· 3 cups pears – peeled, cored, and chopped
· 1 cup vegetable oil
· 20 packets of Nectresse
· 3 eggs, beaten
Directions
1. Preheat oven to 300 degrees F (150 degrees C). Prepare 2 loaf pans (8 1/2×4 1/2-inch loaf pans) with cooking spray.
2. Mix flour, baking soda, salt, pecans, and pears in a large bowl. Whisk oil, Nectresse, and eggs together in a small bowl; add to flour mixture and mix until just moistened.
3. Bake in preheated oven until a toothpick inserted into the center comes out clean, about 90 minutes. Cool in the pans for 10 minutes before removing to cool completely on a wire rack.
